I'm wanting to have a development copy of Joomla! running, and be able to copy it into a production area on the same server.

The server uses Fantastico scripts to install Joomla, so it builds the MySQL database

If I understand right, I will go on and create both the developement and procuction installations of Joomla! Then, when I'm ready, I'll "clone" development and tell it to "restore to "production"?

When Fantastico creates the two installations, it will create one database as db_1 and the production as db_2.

When I restore, where will it restore the database?

Hey there! When restoring, you will get a configuration screen where you can input which database to use! And yes, after you make the clone on the development site you will be able to move and restore to the production site!
