Is it possible to skip certain files/folders, sop they won't be backup'ed?

Yes, if you look in the Generate backup tab, you should be able to see the files/folders listed and a checkbox near each of them, checking it will mark them for exclusion.

 

For automated cron backups, the exclude option can be found in the XCloner Config Cron tab.
